Important!

Herbs Please do not collect herbs nearby busy roads, fertilized meadows and other places of which you do not know how the ground was treated. 
Ornamental and Indoor Plant Please leave newly bought plants for about 6 months under quarantine (maybe even longer) and out of reach of the torts.
Most plants are either fertilized or have been treated with chemicals. To be on the safe side for the torts, I'd stick to the quarantine time so that the chemicals are reduced before they eat it.
Trees/Bushes/Shrubs  
Toxic plants There are not enough studies about toxic plants and how they affect tortoises. The mentioned toxic plants actually referr to humans and in a few cases to poisoned torts. We do not know how much the metabolism of a tortoise has in common with that of humans, but as long as we do not have other sources .... it is better to be on the safe side.

Again and again you can hear that torts eat Cuckoo pint, Greater Celandine and other toxic plants in their natural habitat and it had no effects on them. As long as these plants grow in the pens and the torts can decide whether to eat it or not it is alright. They do know by themselves what they can eat. On a tortoise table and when fed by humans, they usually eat because they are bored and therefore they consume the plants you give them. 

My proposal: Only feed plants that are known to be safe for torts.

Please always feed a broad variety of plants and not only one type!
Tortoises depend on diversified  food!
The more variety the healthier their diet. This is due to the well balanced  ratio of the needed trace elements, fibre and vitamins.
